This recipe is a tasty and nutritious blend of fiber, protein, and vitamins - great as a post workout meal or for breakfast, lunch, and even dinner! The Halloween “jack o lanterns” can be recreated and filled with hummus, guacamole, whole wheat pasta and sauce, or ground turkey and brown rice. They look cute and they are loaded with Vitamin C, so you can celebrate this spooky time of year AND boost your immune system too!
Start by sauteing the following on medium-low heat:
1 chopped medium onion
1/2 chopped zucchini, or asparagus
2 cups cooked black beans, rinsed and drained
2 handfuls of grape tomatoes halved
2 tsps. Red wine vinegar
1/2 tsp of black pepper
1 tsp of salt
1 tsp garlic powder or 1 spoonful of fresh minced garlic
After the veggies have cooked (about 7 minutes) add the following optional ingredients:
2 spoonfuls of cheese
Cook the eggs and cheese into the scramble, stirring constantly.
After eggs are thoroughly cooked, about 4-5 minutes, remove from the heat and spoon your scramble into the bell pepper lanterns.
If desired, place on a baking sheet and top with shredded cheese, then bake for 5-7 minutes at 325 degrees Fahrenheit.
