Start by sautéing 1 chopped bell pepper(red green or yellow) and 1 chopped yellow onion in about 2 tbsp. of olive oil. (Red onion works too!)
After about 4 - 5 minutes s on medium heat, the peppers and onions will be softer, so you can now add 2 cups of cooked black beans. Toss in 1 cup of cherry or grape tomatoes and continue cooking for about 3 minutes.
Season with the juice of half to one whole lemon or lime and then add 1/2 tsp of each of the following: salt, black pepper, onion and garlic powder. If you like heat, you can add in some red chili flakes or diced jalepeno too.
Add in 2 spoonfuls of nutritional yeast for added protein and for your cheesy replacement.
Turn off heat and add in about 3/4 cup of chopped fresh cilantro.
Serve your tacos in romaine lettuce leaves with sliced avocado.
If you are still missing your sour cream, replace it with a spoonful of plain Greek yogurt.
If you really want this meatless meal wrapped in a burrito or taco, always choose one made from corn, whole wheat, or brown rice flour.
