In a food processor or blender, combine 3 cloves of garlic, 3 avocados, 1/2 tsp. of salt, 1/2 tsp. of pepper, and the juice of two lemons.
Blend until smooth. While mixing, add in 1 tbsp. of olive oil and 3-4 tbsps. of water to dilute the dressing. You don’t want it super thick but rather it should have thinner consistency so it pours easily over your salad.
Transfer to a jar and cover, then keep refrigerated.
