Preheat oven to 375 degrees Fahrenheit. Slice the ends off the eggplant and discard. Slice your eggplant into 1/2 inch thick slices and lay on a baking sheet drizzled with olive oil. (Drizzle oil on pan first then ontop of eggplant slices once they are on the pan). Season with salt, pepper, and garlic powder. Bake for about 10 minutes then flip the eggplant. Continue baking for an additional 10 minutes. (If you’ve sliced your eggplant thinner, you can bake your eggplant for about 15 - 17 minutes.)
Eggplant is very nutritious and versatile, so feel free to dress up your eggplant slices with Parmesan cheese, tomato slices, tomato sauce, or pesto. Add them to a meal as a side dish or enjoy them as a snack. They are super tasty if stack em’ and eat them alone. Enjoy!
